Morning: The Bustling Market

6:00 AM: The morning sun shines bright and cheery over the bustling streets of Cairo. A tourist wanting to experience the city through the companionship of a local begins their journey at the local marketplace. Here, vendors stock their stalls, which are brimming with spices, fresh fruits and vegetables and local wares. The atmosphere is filled with the smell of spices, freshly baked bread and the voices of bus drivers calling the final destination on their route.

At a small, locally owned dive, our guide and local resident orders a dish of koshari, which is a flavorful blend of lentils, rice and pasta topped with a spicy tomato spicy and sprinkled with crispy, caramelized onion. This simple dish is an authentic street food experience of Egypt.
